Ingredients

Scale
  • 1 pound ground beef
  • 56 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ½ teaspoon dried thyme (optional)
  • 2 tablespoons butter or olive oil
  • 2 tablespoons all-purpose flour

Instructions

  1. Prep Ingredients: Wash, peel, and dice potatoes. Chop onion and mince garlic.
  2. Brown Meat: In a skillet, melt butter or heat oil. Brown ground beef over medium heat until fully cooked; drain excess fat.
  3. Assemble in Crockpot: Add potatoes, onions, garlic, and browned hamburger to the crockpot. Pour in beef broth and season with salt, pepper, paprika, and thyme. Stir to combine.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Thicken and Finish: About 30 minutes before serving, mix heavy cream with flour and stir into soup. Taste and adjust seasoning.
  6. Serve: Ladle into bowls, top with extra cheese if desired, and enjoy!
  7. Swap cheddar with mozzarella, pepper jack, or Swiss for different flavors.
  8. Add carrots, celery, or peas for extra veggies.
  9. Use ground turkey or chicken for a leaner version.
  10. For a lighter soup, replace heavy cream with half-and-half or milk.
