1 pound ground beef
5–6 medium potatoes, diced
1 medium onion, chopped
2 cloves garlic, minced
3 cups beef broth
1 cup shredded cheddar cheese
1 cup heavy cream
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional)
½ teaspoon dried thyme (optional)
2 tablespoons butter or olive oil
2 tablespoons all-purpose flour
Instructions
Prep Ingredients: Wash, peel, and dice potatoes. Chop onion and mince garlic.
Brown Meat: In a skillet, melt butter or heat oil. Brown ground beef over medium heat until fully cooked; drain excess fat.
Assemble in Crockpot: Add potatoes, onions, garlic, and browned hamburger to the crockpot. Pour in beef broth and season with salt, pepper, paprika, and thyme. Stir to combine.
Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours.
Thicken and Finish: About 30 minutes before serving, mix heavy cream with flour and stir into soup. Taste and adjust seasoning.
