Crockpot Marry Me Chicken is a comforting and flavorful slow cooker recipe featuring tender chicken in a creamy sauce with vegetables. It’s an easy meal perfect for weeknights or family gatherings.

  • 1 whole (about 34 pounds) chicken, cut into 8 pieces or 3 pounds bone-in, skin-on chicken thighs
  • 1 (1 ounce) packet ranch seasoning mix
  • 1 (1 ounce) packet onion soup mix
  • 1 cup chicken broth
  • 1/2 cup creamy ranch dressing
  • 1/4 cup butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (15 ounce) can cream of mushroom soup
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken pieces dry with paper towels.
  2. In a large bowl, whisk together ranch seasoning mix, onion soup mix, garlic powder, paprika, black pepper, thyme, and cayenne pepper (if using).
  3. Add melted butter and olive oil; toss until chicken is evenly coated.
  4. Chop onion, carrots, and celery into 1-inch pieces.
  5. Spray slow cooker with cooking spray.
  6. Place seasoned chicken in the bottom of the slow cooker.
  7. Add chopped onions, carrots, and celery on top of chicken.
  8. Pour undrained Rotel over vegetables.
  9. Pour chicken broth and creamy ranch dressing over everything.
  10. Stir in cream of mushroom soup.
  11. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken reaches 165°F (74°C).
  12. Remove chicken from slow cooker and let cool slightly.
  13. Shred chicken with two forks. Set aside.
  14. Remove vegetables with a slotted spoon, leaving most of the sauce. Set aside.
  15. Return shredded chicken to slow cooker and stir into sauce.
  16. Add cooked vegetables; stir gently to combine.
  17. Serve hot, garnished with parsley. Serve with mashed potatoes, rice, or bread.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a spicier dish, add more cayenne pepper or red pepper flakes.
  • Add other vegetables like potatoes, bell peppers, or mushrooms.
  • Substitute sour cream or Greek yogurt for creamy ranch dressing.
  • Bone-in, skin-on chicken thighs can be used instead of a whole chicken.
