Instructions

  1. Peel and slice 3 large onions into ⅛ to ¼ inch thick rings. Separate rings. For milder flavor, soak in ice water for 15-30 minutes, then drain thoroughly and pat very dry.
  2. Prepare three shallow dishes: 1) Dry flour mix: 1 cup all-purpose flour, 0.5 cup cornstarch, 1 tsp sea salt, 0.5 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp smoked paprika, 0.25 tsp cayenne (optional). Whisk well. 2) Egg wash: 2 large eggs, 0.5 cup milk, whisked. 3) Seasoned panko: 3 cups panko breadcrumbs, 0.5 cup all-purpose flour, 1 tsp sea salt, 0.5 tsp black pepper. Mix well.
  3. Working in batches, dredge onion rings: first in the seasoned flour mix (shake off excess), then in the egg wash (let excess drip), then press firmly into the seasoned panko breadcrumbs to ensure a thick, even coating. Place coated rings in a single layer on a parchment-lined baking sheet or directly into an air fryer basket; do not overcrowd.
  4. Preheat oven to 400°F (200°C). Lightly mist coated onion chips with cooking spray or drizzle with olive oil. Bake for 15-20 minutes, flipping halfway through, until gloriously golden brown and wonderfully crispy. Keep a close eye as oven temperatures vary.
  5. Preheat air fryer to 375°F (190°C) for 3-5 minutes. Place coated onion chips in a single layer, lightly mist with cooking spray or oil.
