  • 1 ½ cups chocolate cookie crumbs
  • ½ cup melted butter
  • 24 oz full-fat cream cheese
  • 1 cup sugar
  • 1 cup sour cream
  • 1 cup hot cocoa mix
  • 3 large eggs
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • ½ cup mini marshmallows

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and beat until well combined. Mix in the sour cream and hot cocoa mix until smooth.
  4. One at a time, add the eggs, mixing well after each addition. Finally, stir in the melted chocolate chips until fully incorporated. Make sure to scrape down the sides of the bowl to ensure everything is well mixed.
  5. Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula.
  6. Bake in the preheated oven for about 55-60 minutes, or until the edges are set and the center is slightly jiggly. It will firm up as it cools.
  7. Turn off the oven and leave the cheesecake inside for 1 hour to prevent cracking. Remove it from the oven and let it cool at room temperature for another hour before transferring it to the refrigerator. Chill for at least 4 hours, or preferably overnight.
  8. Before serving, whip some heavy cream and top your cheesecake with it for an extra indulgent touch. You can also sprinkle some mini marshmallows or chocolate shavings on top for a festive look.
