  • 1 package Crescent Roll Dough (Puff pastry can be an alternative.)
  • 1 cup Breadcrumbs (Using seasoned breadcrumbs enhances flavor.)
  • 4 tablespoons Butter (Melted; olive oil can be used.)
  • 2 tablespoons Flour (Corn starch for a gluten-free option.)
  • 1 cup Chicken Broth (Use vegetable broth for a vegetarian option.)
  • 1 cup Half-and-Half (Coconut cream as a dairy-free alternative.)
  • 1 cup Parmesan Cheese (Freshly grated for best flavor.)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium-sized mixing bowl, combine shredded chicken, softened cream cheese, sliced green onions, salt, and pepper. Mix until well-combined.
  3. Unroll the crescent roll dough onto a clean surface, separating into triangles or cutting sheets into squares.
  4. Place about 2 tablespoons of chicken filling at the wide end of each triangle and fold the dough over, pinching edges tightly.
  5. Melt some butter and brush it over the tops of the Chicken Pillows. Coat each with seasoned breadcrumbs.
  6. Place the Chicken Pillows onto the prepared baking sheet and bake for 20-25 minutes until golden brown.
  7. In a saucepan, melt butter and whisk in flour. Gradually add chicken broth and half-and-half, stirring until thick.
  8. Stir in Parmesan cheese and season with garlic powder, salt, and pepper.
  9. Let the Chicken Pillows cool slightly before serving. Drizzle with the creamy Parmesan sauce.
