Dorito Meatloaf Casserole is a comforting and crunchy dish perfect for busy weeknights. It features layers of seasoned ground beef and Italian sausage, a creamy cream cheese filling, and a topping of crushed nacho cheese Doritos for a unique texture and flavor.

  • 1 pound Extra Lean Ground Beef
  • 1 pound Italian Pork Sausage
  • 2 large Eggs
  • 1/3 cup Milk
  • 8 oz Cream Cheese, softened
  • 1 oz Ranch Dressing Mix
  • 1 cup Diced Green Bell Pepper
  • 3 cups Crushed Doritos
  • 3 cups Shredded Mozzarella

Instructions

  1. Preheat oven to 350°F (175°C). Combine ground beef, Italian sausage, eggs, milk, and 2 cups of crushed Doritos in a large bowl.
  2. Press half of the meat mixture into a greased 9×13 inch baking dish.
  3. In a separate bowl, blend cream cheese, ranch dressing mix, and 1 tablespoon of milk until smooth. Spread this mixture over the meat layer.
  4. Sprinkle diced green bell pepper and half of the shredded mozzarella cheese over the cream cheese layer.
  5. Add the remaining meat mixture on top and press down firmly.
  6. Bake for 40 minutes, or until the meat is cooked through and the edges are bubbly.
  7. Sprinkle the remaining mozzarella cheese and crushed Doritos over the top.
  8. Return to the oven and bake for another 10 minutes, until the cheese is melted and bubbly.
  9. Let the Dorito Meatloaf Casserole rest for 10 minutes before slicing and serving.

Notes

  • For a lighter option, use ground turkey instead of beef and ground Italian turkey sausage.
  • Ricotta cheese can be used instead of cream cheese for a lighter taste.
  • Any preferred bell pepper can be used, or omitted.
  • Plain tortilla chips can be substituted for Doritos for a milder taste.
  • Cheddar or a cheese blend can be used instead of mozzarella.
