4 boneless, skinless chicken breasts (pounded or sliced into cutlets)
1 cup cornstarch
3 large eggs
2 tbsp water
1½ cups all-purpose flour
1 tsp baking powder
1½ tsp garlic powder
1 tsp onion powder
1½ tsp salt
1 tsp paprika
½ tsp black pepper
Oil for frying (canola or vegetable)
½ cup honey
2 tbsp soy sauce
4 garlic cloves, minced
1 tbsp apple cider vinegar (or rice vinegar)
½ tsp red pepper flakes (optional)
Instructions
Pound chicken breasts to even thickness or slice into thin cutlets.
Place cornstarch in one bowl, whisk eggs and water in a second, and mix flour, baking powder, garlic powder, onion powder, salt, paprika, and pepper in a third.
Coat chicken in cornstarch, dip in egg, coat in flour, then repeat egg and flour for extra crunch.
Heat oil to 350°F (175°C). Fry chicken 4–5 minutes per side until golden and cooked through. Drain on a wire rack.
Simmer honey, soy sauce, garlic, vinegar, and red pepper flakes for 3–4 minutes until slightly thickened.
Drizzle or brush honey garlic sauce over chicken just before serving.
