This Dutch Oven Herb Bread is a no-knead, beginner-friendly loaf with a crisp golden crust and soft, airy interior. Infused with garlic and dried herbs, it delivers bakery-quality results using simple pantry ingredients and instant yeast—perfect for soups, stews, sandwiches, or serving warm with butter.

  • 3 cups (360g) all-purpose flour
  • 1½ teaspoons salt
  • ½ teaspoon garlic powder
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • ½ teaspoon instant yeast
  • 1½ cups warm water (about 110°F / 43°C)

Instructions

  1. In a large bowl, combine flour, salt, garlic powder, herbs, pepper, and instant yeast. Pour in warm water and stir until a shaggy, sticky dough forms.
  2. Cover and let rise at room temperature for 8–18 hours until doubled and bubbly.
  3. Turn dough onto a floured surface, gently shape into a round loaf, and place on parchment paper. Rest 30–60 minutes.
  4. Place Dutch oven with lid inside oven and preheat to 450°F (230°C) for at least 30 minutes.
  5. Transfer dough (with parchment) into hot Dutch oven. Score top, cover, and bake 30 minutes.
  6. Remove lid and bake an additional 10–15 minutes until golden brown.
  7. Transfer to wire rack and cool at least 30 minutes before slicing.
