1 package English muffins, split into halves
8 large eggs, scrambled
1 lb beef breakfast sausage, cooked and crumbled
8 oz mild cheddar cheese, thinly sliced
For Sawmill Gravy:
¼ cup beef sausage drippings (or butter)
¼ cup all-purpose flour
2 cups milk
½ tsp salt
¼ tsp black pepper
Instructions
Cook 1 lb beef breakfast sausage in a pan until browned and crumbled. Drain, reserving ¼ cup drippings. Set sausage aside.
Scramble 8 large eggs until just set, then roughly chop them.
Prepare Sawmill Gravy: In the same pan, whisk ¼ cup beef drippings (or butter) with ¼ cup all-purpose flour over medium heat for 1 minute. Gradually whisk in 2 cups milk. Bring to a simmer, stirring constantly, until the gravy thickens (about 5 minutes). Season with ½ tsp salt and ¼ tsp black pepper.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Arrange the split English muffin halves, cut-side up, on the prepared baking sheet.
On each muffin half, layer a slice of mild cheddar cheese, followed by a portion of scrambled eggs, then the cooked beef breakfast sausage, and finally, a generous spoonful of the warm sawmill gravy.
Bake for 10-15 minutes, or until the cheese is completely melted and bubbly, and the English muffins are lightly toasted and warmed through.
