  • 3 garlic cloves (minced)

  • 1 teaspoon honey (optional, for sweetness)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the rosemary, garlic, olive oil, lemon juice, lemon zest, and honey (if using). Stir until well blended.
  2. Place the lamb chops in a resealable plastic bag or shallow dish. Pour the marinade over the chops, making sure the meat is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill to medium-high heat (around 400°F or 200°C). If using a grill pan, heat it over medium-high heat on the stove.
  4. Remove the lamb chops from the marinade and discard the marinade. Place the lamb chops on the grill and cook for 3-4 minutes per side for medium-rare (or 4-5 minutes for medium). Use a meat thermometer to check for doneness.
  5. After grilling, remove the lamb chops from the heat and let them rest for 5 minutes. This helps redistribute the juices.
