1 tablespoon butter
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 cup beef broth
1 teaspoon Worcestershire sauce
Salt and black pepper, to taste
6 (8-inch) flour tortillas
12 slices deli-style roast beef (about 1/2 pound)
6 slices provolone cheese
Optional garnish: chopped parsley or green onions
Instructions
Melt butter in a saucepan over medium heat. Add onion and cook until softened, about 4 minutes. Add garlic and cook 1 minute more. Stir in beef broth and Worcestershire sauce, season with salt and pepper, and simmer 5–6 minutes. Set aside.
Lay a tortilla flat. Place 2 slices of roast beef in the center and top with 1 slice of provolone cheese. Roll up tightly like a burrito.
Preheat oven to 375°F (190°C). Place roll ups seam-side down on a parchment-lined baking sheet. Lightly brush or spray with oil or butter. Bake for 12–15 minutes until golden and cheese is melted.
Slice roll ups diagonally and serve warm with the au jus dipping sauce.
