  • 4 tablespoons Unsalted Butter (for the garlic butter sauce)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Lemon Juice (or lime juice)
  • 2 teaspoons Fresh Thyme (or 1/3 dried thyme)
  • to taste Salt
  • to taste Pepper
  • 1 pound Baby Potatoes (halved or quartered)
  • 2 tablespoons Olive Oil (or melted coconut oil)

Instructions

  1. Preheat your oven to 425°F (220°C) for crispy roasted potatoes.
  2. Prepare the baby potatoes by halving or quartering, toss with olive oil, salt, pepper, and garlic powder.
  3. Roast the potatoes in preheated oven for about 20-25 minutes, stirring halfway through.
  4. In a saucepan, melt unsalted butter over medium heat, add minced garlic and sauté until fragrant.
  5. Cook cod fillets in a skillet over medium-high heat for 3-5 minutes on each side until golden brown.
  6. Pour the garlic butter sauce over cooked cod and let it soak in for about a minute.
  7. Serve the cod and potatoes, garnished with fresh parsley and lemon wedges.
