  • 1/2 cup molasses
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of ground ginger, 1 teaspoon of baking soda, and 1 teaspoon of ground cinnamon. Set aside.
  3. In a separate bowl, beat 1 cup of softened unsalted butter with 1 cup of brown sugar and 1/2 cup of molasses until light and fluffy.
  4. Mix in one egg until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until everything is well combined.
  6. Scoop about a tablespoon of dough and roll it into a ball. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  7. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  8. Spoon in your cranberry jam into each indentation, filling it generously.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
