  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup molasses
  • 1 cup hot water
  • 1 egg
  • 3 cups powdered sugar
  • 2 tablespoons molasses
  • 23 tablespoons milk (as needed for texture)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour your cake pan or line with parchment.
  2. In a large bowl, whisk together flour, brown sugar, baking soda, ginger, cinnamon, cloves, and salt.
  3. Add butter, molasses, and hot water. Mix until just combined. Add the egg and beat until smooth.
  4. Pour batter into prepared pan and bake 30–35 minutes (9×13) or 25–30 minutes (8-inch rounds), until a toothpick comes out clean.
  5. Let cake cool in pan 10 minutes, then transfer to a wire rack to cool completely.
  6. Beat butter until creamy. Add powdered sugar, molasses, vanilla, and milk. Beat until smooth and fluffy.
  7. Spread frosting on cooled cake, decorate as desired, and serve or chill to set.
