  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar (or white vinegar)
  • 1 tablespoon Sugar (to taste)
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black Pepper (to taste)
  • 1 medium Red Bell Pepper, diced
  • 2 stalks Celery, sliced
  • 1 small Red Onion, chopped
  • 1 tablespoon Parsley, minced
  • 1/2 cup Sweet Pickles or Relish
  • Optional Add-ins: 2 large Hard-Boiled Eggs, chopped; 1 cup Diced Ham; 1 cup Shredded Cheese

Instructions

  1. Cook elbow macaroni in boiling salted water until al dente. Drain and rinse under cold water.
  2. In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
  3. Add the cooled macaroni to the dressing and toss gently until evenly coated.
  4. Fold in the diced red bell pepper, celery, red onion, parsley, and sweet pickles or relish.
  5. Stir in any optional add-ins like hard-boiled eggs, diced ham, or shredded cheese.
  6. Chill the macaroni salad in an airtight container for at least one hour before serving to allow flavors to meld.

Notes

  • For a lighter version, substitute half the mayonnaise with Greek yogurt.
  • Adjust sugar, salt, and pepper to your preference.
  • This salad can be made ahead and stored in the refrigerator for up to 3 days.
  • If the salad appears dry after chilling, stir in a little extra mayonnaise or apple cider vinegar before serving.
