1 cup dry orzo pasta
1 1/2 tbsp extra virgin olive oil
Zest of 1 lemon
Juice of 1 lemon (about 2–3 tbsp)
2 tbsp fresh parsley, finely chopped
1 tbsp fresh dill or mint, chopped
1 green onion, finely chopped
Salt and black pepper, to taste
Optional: crumbled feta cheese for garnish
Instructions
Bring a pot of well-salted water to a boil. Add orzo and cook according to package directions (8–10 minutes) until al dente.
Drain orzo thoroughly and transfer to a mixing bowl.
Drizzle warm orzo with olive oil and toss to prevent sticking.
Stir in lemon zest and lemon juice while orzo is still warm.
Mix in parsley, dill, green onion, salt, and pepper.
Add more lemon juice or seasoning if needed.
Serve warm, room temperature, or chilled. Garnish with feta if desired.
