Ingredients

Scale
  • 1 cup dry orzo pasta
  • 1 1/2 tbsp extra virgin olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tbsp)
  • 2 tbsp fresh parsley, finely chopped

  • 1 green onion, finely chopped
  • Salt and black pepper, to taste

  2. Drain orzo thoroughly and transfer to a mixing bowl.
  3. Drizzle warm orzo with olive oil and toss to prevent sticking.
  4. Stir in lemon zest and lemon juice while orzo is still warm.
  5. Mix in parsley, dill, green onion, salt, and pepper.
  6. Add more lemon juice or seasoning if needed.
  7. Serve warm, room temperature, or chilled. Garnish with feta if desired.
