  • 1 1/4 cups boiling water
  • 3/4 cup cold red berry flavored sparkling water (non-alcoholic)
  • 9 bloodshot eye candies
  • 1 (15 oz) can whole peeled lychees, drained and rinsed
  • 1 pint fresh blueberries
  • 34 boxes (3 oz each) flavored gelatin (lime green, orange, red, blue, or purple)
  • 34 cups boiling water
  • 23 cups cold vodka or light rum (optional, for alcoholic version)
  • 1/2 cup clear unflavored liqueur or fruit-flavored liqueur (optional)
  • 2436 2-ounce plastic or glass shot cups with lids
  • Red gel food coloring
  • Small, clean paintbrush or toothpick
  • Baking sheet or large tray

Instructions

  1. Prepare the Eyeballs: Drain and rinse whole lychees. Insert a blueberry into the hollow core of each lychee to create the pupil. Chill the prepared eyeballs for 15-20 minutes.
  2. Prepare the Jello Base: Boil water. In a heat-proof bowl, dissolve gelatin powder with boiling water, whisking for 2-3 minutes until completely dissolved.
  3. Add Cold Liquid: For alcoholic version, whisk in cold vodka or rum (and optional liqueur) for another minute. For non-alcoholic, whisk in cold sparkling water.
  4. Cool the Jello: Let the jello mixture cool at room temperature for 15-20 minutes until cool to the touch but still liquid.
  5. Assemble the Shots: Arrange shot cups on a tray. If layering, pour a small amount of the first jello color into each cup and chill until mostly set but tacky.
  6. Position Eyeballs: Place one prepared lychee eyeball into each shot cup, ensuring the blueberry pupil faces up.
  7. Pour Remaining Jello: Carefully pour the remaining jello mixture over and around each eyeball, filling the cup almost to the top. If layering, pour the next cooled jello color.
  8. Final Chill: Refrigerate the jello shots for at least 3-4 hours, or preferably overnight, until completely firm.
  9. Add Finishing Touches: Once firm, use red gel food coloring to draw thin, squiggly veins radiating from the blueberry pupil onto the lychee.
  10. Set the Gel: Return the decorated jello shots to the refrigerator for another 15-30 minutes to allow the gel to set.
  11. Serve: Arrange on a platter and serve cold.

  • For a non-alcoholic version, omit the vodka/rum and use sparkling water or juice.
