1/2 teaspoon salt
1/2 cup unsalted butter, chilled and cubed
1/4 cup ice cold water
1/2 cup pumpkin puree
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs. Gradually add cold water, stirring until the dough comes together. Wrap in plastic and chill for 30 minutes.
In a separate bowl, combine pumpkin puree, sugar, cinnamon, and nutmeg.
Roll out the dough on a floured surface and cut into Halloween-themed shapes using cookie cutters.
Place a spoonful of pumpkin mixture on half of the shapes, leaving a small border.
Cover with the remaining shapes and press edges to seal.
Brush the tops with beaten egg and bake for 15-20 minutes, or until golden brown.
