Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a separate pan, heat olive oil over medium heat.
  5. Add broccoli and carrots, sauté for 5 minutes.
  6. Add cherry tomatoes, garlic powder, salt, and pepper. Cook for another 3 minutes.
  7. Fluff quinoa with a fork and mix with the vegetable mixture.
