  • 1 cup of black beans
  • 1 cup of corn
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Cook quinoa in a pot with 4 cups of water for 15 minutes.
  3. In a bowl, mix black beans, corn, and bell pepper.
  4. Once quinoa is done, fluff with a fork and mix with the bowl ingredients.
  5. Drizzle with olive oil, and add cumin, salt, and pepper.
  6. Serve with sliced avocado on top.
