Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa, reduce heat, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until translucent.
  6. Add bell pepper and zucchini, cook for 5 minutes.
  7. Add black beans, cumin, paprika, salt, and pepper, stir well.
  8. Combine cooked quinoa with the vegetable mixture, mix thoroughly.
