100 g almond flour (finely ground, blanched)
100 g powdered sugar
100 g granulated sugar
75 g egg whites, aged at room temperature
25 ml water
Gel food coloring (optional)
Macaron filling of choice (buttercream, ganache, or jam)
Instructions
Sift almond flour and powdered sugar together twice and set aside.
Heat granulated sugar and water to 240°F (115°C).
Whip egg whites until foamy, then slowly pour in the hot sugar syrup while mixing.
Whip until glossy, stiff peaks form.
Fold dry ingredients and gel coloring gently into the meringue until batter flows like lava.
Pipe heart shapes onto lined baking sheets.
Let shells rest 20–45 minutes until a skin forms.
Bake at 300°F (150°C) for 12–14 minutes.
Cool completely, fill, and mature overnight in the refrigerator.
