Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine 1 cup of cornmeal, 1 cup of all-purpose flour, 1 tablespoon of baking powder, and ½ teaspoon of salt. Whisk these together until evenly mixed.
  3. In another bowl, cream together ½ cup of softened unsalted butter and ½ cup of honey until light and fluffy. This should take about 2-3 minutes.
  4. Beat in 1 large egg and ¼ cup of milk until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  6. Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in your preheated oven for about 12-15 minutes or until the edges start to turn golden and a toothpick inserted in the center comes out clean.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
