Ingredients

Scale
  • 1 pound (450g) lean ground beef
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (low sodium)
  • 2 tablespoons hot honey
  • 1 teaspoon chili paste or sriracha (optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon tomato paste
  • Salt and black pepper, to taste
  • 2 cups cooked jasmine or brown rice
  • 1 cup steamed broccoli florets
  • 1 small carrot, shredded
  • 1/2 avocado, sliced (optional)
  • 1 teaspoon sesame seeds, for garnish
  • Green onions or cilantro, for topping

Instructions

  1. Cook rice according to package directions. Set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat if needed.
  3. Stir in minced garlic and tomato paste. Cook for 1 minute until fragrant.
  4. In a small bowl, whisk together soy sauce, hot honey, vinegar, and chili paste. Pour over the beef and stir to coat.
  5. Simmer for 5 minutes until the sauce thickens slightly and coats the beef.
  6. Add rice to a serving bowl. Top with hot honey beef, steamed broccoli, shredded carrots, and avocado slices.
  7. Garnish with sesame seeds, green onions, or cilantro.
  8. Serve warm or pack for meal prep.

Notes

  • Use rice vinegar for a balanced tangy-sweet flavor in the hot honey sauce.
  • Add a fried or poached egg on top for an extra protein boost.
  • For meal prep, divide the cooked beef and rice into containers for easy grab-and-go meals.
  • Substitute tofu or tempeh for a vegetarian version.
  • To make homemade hot honey: mix 1/2 cup honey with 1 teaspoon chili flakes and warm gently.
