- 2 cups (240 g) all-purpose flour
- 1/2 cup (60 g) chopped pecans (optional)
- Cream Cheese Layer:
- 8 ounces (226 g) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 1 container (8 ounces / 225 g) whipped topping, divided
- Pistachio Pudding Layer:
- 2 packages (3.4 ounces each) instant pistachio pudding mix
- 3 cups (720 ml) cold milk
- Top Layer & Garnish:
- Remaining whipped topping
- Chopped pistachios or pecans for garnish
- Preheat oven to 350°F (175°C). Combine melted butter, flour, and chopped pecans until crumbly. Press evenly into a 9×13-inch baking dish.
- Bake for 15–18 minutes until lightly golden. Allow crust to cool completely.
- Beat softened cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread evenly over cooled crust.
- Whisk pistachio pudding mix with cold milk for about 2 minutes until thickened. Spread gently over cream cheese layer.
- Spread remaining whipped topping evenly over the pudding layer. Refrigerate for at least 4 hours, preferably overnight.
- Sprinkle with chopped pistachios or pecans before slicing into squares.
