Irresistible Shrimp Rice Bowls: The Ultimate Healthy & Easy Power Meal

  • For the Rice Base:
  • 1 cup (185 g) long-grain white rice or brown rice
  • 2 cups (480 ml) water or broth
  • 1/4 teaspoon salt
  • For the Shrimp:
  • 1 pound (450 g) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh Toppings:
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley or cilantro
  • Optional Sauce:
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Rinse rice under cold water until clear. Combine rice, water or broth, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes for white rice (40–45 for brown). Let rest 5 minutes, then fluff with a fork.
  2. Pat shrimp dry and toss with olive oil, garlic powder, smoked paprika, chili flakes (if using), salt, pepper, and lemon zest.
  3. Heat a skillet over medium-high heat. Cook shrimp in a single layer for 2–3 minutes per side until pink and opaque. Remove from heat and drizzle with fresh lemon juice.
  4. Whisk together Greek yogurt, lemon juice, olive oil, and salt until smooth and creamy.
  5. Divide rice among bowls. Top with shrimp, avocado, tomatoes, cucumber, and red onion. Drizzle with sauce and garnish with fresh herbs. Serve immediately.
