Irresistible Strawberry Muffins – The Ultimate Strawberry Muffin Recipe With Streusel Topping

  • For the Muffins:
  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons (8 g) baking powder
  • 1/2 teaspoon (3 g) salt
  • 1/2 cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120 ml) milk
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups (225 g) fresh strawberries, diced
  • For the Streusel Topping:
  • 1/2 cup (60 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (55 g) cold unsalted butter, cubed
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Alternate adding dry ingredients and milk. Mix gently until just combined.
  6. Gently fold diced strawberries into the batter. Toss them lightly in flour first to prevent sinking.
  7. Mix flour and sugar, then cut in cold butter until crumbly.
  8. Divide batter evenly into muffin cups. Sprinkle streusel generously over each muffin.
  9. Bake for 20–25 minutes until golden and a toothpick inserted comes out clean.
  10. Let muffins rest in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
