- 2 pounds (900g) ripe tomatoes, chopped
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- ¾ cup brown sugar
- ½ cup apple cider vinegar
- 1 teaspoon mustard seeds
- ½ teaspoon chili flakes (optional)
- ½ teaspoon salt
- 1 tablespoon olive oil
- Chop tomatoes, onions, and garlic. Measure out all ingredients before cooking.
- Heat olive oil in a large saucepan over medium heat. Add onions and cook until translucent, about 5 minutes. Stir in garlic and ginger until fragrant.
- Stir in chopped tomatoes, mustard seeds, chili flakes, and salt. Add vinegar and brown sugar. Mix well.
- Reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally, until thick and jam-like.
- Taste and adjust sugar or vinegar for balance. Let cool slightly before transferring to sterilized jars.
- Seal tightly and refrigerate for up to 4 weeks. Flavor deepens over time.
