Irresistibly Easy Tomato Chutney – A Homemade Pantry Essential

  • 2 pounds (900g) ripe tomatoes, chopped
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ¾ cup brown sugar
  • ½ cup apple cider vinegar
  • 1 teaspoon mustard seeds
  • ½ teaspoon chili flakes (optional)
  • ½ teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Chop tomatoes, onions, and garlic. Measure out all ingredients before cooking.
  2. Heat olive oil in a large saucepan over medium heat. Add onions and cook until translucent, about 5 minutes. Stir in garlic and ginger until fragrant.
  3. Stir in chopped tomatoes, mustard seeds, chili flakes, and salt. Add vinegar and brown sugar. Mix well.
  4. Reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally, until thick and jam-like.
  5. Taste and adjust sugar or vinegar for balance. Let cool slightly before transferring to sterilized jars.
  6. Seal tightly and refrigerate for up to 4 weeks. Flavor deepens over time.
