Bold & Hearty Italian Sausage and Potatoes Skillet: The Ultimate One-Pan Comfort Meal

Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage links (or ground Italian sausage)
  • 1 ½ lbs Yukon Gold potatoes, cut into ½-inch pieces
  • 1 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut potatoes into ½-inch pieces. Slice onion, mince garlic, and chop parsley. If using sausage links, slice into thick rounds.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook 6–8 minutes until browned. Remove and set aside.
  3. Add more oil if needed, then add potatoes. Season with salt and pepper. Cook 10–12 minutes, stirring occasionally, until golden and tender.
  4. Add sliced onions. Sauté 5–6 minutes until softened and caramelized. Add garlic, Italian seasoning, and red pepper flakes.
  5. Return sausage to the skillet. Stir everything together and cook 3–4 minutes to heat through. Taste and adjust seasoning.
  6. Garnish with fresh parsley and serve warm.
