Keto Cloud Cake: A Light and Fluffy Guilt-Free Treat

  • 8 oz Cream Cheese
  • 1 cup Almond Flour
  • 1/2 cup Erythritol
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round baking pan by greasing it.
  2. Whip the egg whites on high speed until stiff peaks form, about 4-5 minutes.
  3. Combine softened cream cheese with the egg yolks using a hand mixer until smooth, about 2-3 minutes.
  4. Gently incorporate almond flour, erythritol, vanilla extract, and baking powder into the cream cheese mixture.
  5. Carefully fold the whipped egg whites into the batter.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
