  • ½ cup sour cream
  • 3 large eggs
  • ½ cup powdered erythritol
  • ⅓ cup fresh key lime juice (or regular lime juice)
  • 1 tablespoon lime zest
  • ½ teaspoon vanilla extract
  • Optional: Whipped coconut cream or sugar-free whipped topping
  • Optional: Extra lime zest or thin lime slices

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix pecan flour, sweetener, melted butter, vanilla, and salt. Press into a 9-inch pie pan.
  3. Bake for 10–12 minutes until lightly golden. Remove and cool completely.
  4. Beat cream cheese and powdered erythritol until smooth.
  5. Add sour cream, eggs, lime juice, zest, and vanilla. Mix until creamy and combined.
  6. Pour filling over cooled crust. Bake for 20–25 minutes, until the center is just set but still slightly jiggly.
  7. Let cool, then refrigerate for at least 4 hours (or overnight) to firm up.
