In a bowl, combine almond flour, melted butter, and sweetener. Mix until crumbly. Spoon 1–2 tablespoons into the bottom of each dessert cup and gently press down.
Beat softened cream cheese until smooth. Add sweetener and vanilla extract. In a separate bowl, whip heavy cream until stiff peaks form. Fold whipped cream into the cream cheese mixture until fully combined.
Spoon or pipe cheesecake mixture over the crust layer, filling nearly to the top.
Mix diced strawberries with sweetener and spoon over cheesecake layer.
Refrigerate for at least 1 hour to allow flavors to develop and texture to firm up before serving.
