Korean Fried Chicken is famous for its ultra-crispy coating, juicy interior, and bold sauces ranging from sweet and spicy to savory soy garlic.

Ingredients

  • 2 lbs chicken wings, drumsticks, or boneless thighs
  • Salt and black pepper, to taste
  • 1 cup cornstarch or potato starch
  • Oil for frying (canola or peanut oil)
  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar

Instructions

  1. Pat chicken dry and season with salt and pepper. Rest 30 minutes.
  2. Toss chicken evenly in cornstarch or potato starch.
  3. Fry at 350°F (175°C) for 6–8 minutes until lightly golden. Remove and rest 5 minutes.
  4. Fry again for 2–3 minutes until deeply golden and extra crispy.
  5. Simmer sauce ingredients in a pan until thick and glossy.
  6. Toss chicken lightly in sauce or drizzle on top. Serve immediately.
