- 2 lbs chicken wings, drumsticks, or boneless thighs
- Salt and black pepper, to taste
- 1 cup cornstarch or potato starch
- Oil for frying (canola or peanut oil)
- 2 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 2 tbsp brown sugar or honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- Pat chicken dry and season with salt and pepper. Rest 30 minutes.
- Toss chicken evenly in cornstarch or potato starch.
- Fry at 350°F (175°C) for 6–8 minutes until lightly golden. Remove and rest 5 minutes.
- Fry again for 2–3 minutes until deeply golden and extra crispy.
- Simmer sauce ingredients in a pan until thick and glossy.
- Toss chicken lightly in sauce or drizzle on top. Serve immediately.
