2 tbsp unsalted butter
2 tbsp olive oil
2 cloves garlic, minced
1/4 cup chicken broth
2 tbsp fresh lemon juice
2 tbsp capers, rinsed & drained
1 tsp lemon zest
Salt and black pepper, to taste
1 tbsp fresh parsley, chopped (optional)
Instructions
In a small saucepan, heat olive oil and 1 tbsp unsalted butter over medium-low heat.
Add minced garlic; sauté for 30 seconds until fragrant.
Pour in chicken broth; bring to a simmer and reduce liquid by half (about 2-3 minutes).
Remove pan from heat. Stir in the remaining 1 tbsp unsalted butter, fresh lemon juice, capers, and lemon zest.
Return to very low heat for 30 seconds to warm through. Stir in chopped fresh parsley. Season with salt and black pepper to taste.
