Ingredients

Scale
  • ½ cup chia seeds
  • 2 cups almond milk or coconut milk
  • ¼ cup maple syrup or honey (maple syrup for vegan option)
  • 1 whole lemon zest (use organic lemons for best flavor)
  • 1 tablespoon lemon juice (adjust to taste)
  • 1 teaspoon vanilla extract (optional) (use vanilla bean paste for more flavor)
  • 1 cup fresh berries (mix of strawberries, blueberries, and raspberries)
  • ½ cup granola (opt for low-sugar)
  • ¼ cup nuts (unsalted chopped or slivered)
  • ¼ cup Greek yogurt or coconut cream (optional) (for extra creaminess)

Instructions

  1. In a medium bowl, whisk together ½ cup of chia seeds with 2 cups of almond milk or coconut milk. Stir vigorously for about 2-3 minutes until the mixture is smooth and slightly thickened.
  2. Add in ¼ cup of maple syrup or honey, along with the zest of one lemon and the juice from that lemon. Mix in a teaspoon of vanilla extract if desired. Stir all the ingredients together until well-combined, ensuring every chia seed is coated.
  3. Cover the bowl tightly and refrigerate for at least 2 hours, preferably overnight, to allow the chia seeds to absorb the liquid.
  4. Once your pudding has set, stir well. Adjust consistency by adding a splash of almond milk or coconut milk if too thick, and taste to add more sweetness if needed.
  5. Spoon the creamy Lemon Cream Chia Pudding into serving bowls or jars and add your desired toppings.
