Irresistibly Healthy Lemon Herb Grilled Chicken with Couscous

2 boneless, skinless chicken breasts
Juice and zest of 1 lemon
2 tbsp olive oil
2 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme or rosemary
Salt and black pepper, to taste
1 cup couscous
1 ¼ cups hot vegetable or chicken broth
1 tbsp olive oil
¼ cup chopped fresh parsley or mint
Optional: chopped cucumbers, cherry tomatoes, olives, red onion
Instructions
Mix lemon juice, zest, garlic, olive oil, oregano, thyme, salt, and pepper. Coat chicken well and marinate for at least 30 minutes or overnight.
Grill or cook in a skillet over medium heat for 6–7 minutes per side, until cooked through and golden.
Add couscous to a heatproof bowl. Pour hot broth over it, cover, and let sit for 5 minutes. Fluff with a fork and stir in olive oil and herbs. Add optional veggies if desired.
Slice the grilled chicken and serve over a bed of couscous. Garnish with lemon wedges and extra herbs.
Divide into airtight containers. Store in the fridge for up to 4 days.
