- 1 lb cooked chicken breast or thighs, shredded
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 (13-oz) bag tortilla chips
- 1½ cups shredded cheddar cheese
- 1 cup Monterey Jack cheese
- 1 (15-oz) can black beans, drained and rinsed
- 1 cup corn kernels
- 1 small red onion, diced
- 1–2 jalapeños, sliced
- ½ cup chopped tomatoes or pico de gallo
- ⅓ cup chopped fresh cilantro
- ½ cup sour cream
- Poblano salsa verde
- Avocado slices or guacamole
- Diced green onions
- Lime wedges
- Heat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss shredded chicken with chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Spread half the chips on the baking sheet. Top with half the chicken, beans, corn, onion, jalapeños, and cheese. Repeat layers.
- Bake 8–10 minutes until cheese is melted and bubbly.
- Top with tomatoes, cilantro, sour cream, salsa verde, avocado, and lime. Serve immediately.
