1½ lbs boneless, skinless chicken thighs
1 tbsp olive oil
1 cup diced onion
2 tbsp minced garlic
1 tbsp fresh ginger, grated
1 tsp ground cumin
1 tsp ground coriander
½ tsp chili powder
1½ tsp kosher salt
1¼ cups unsweetened coconut milk
1¼ cups mango purée
½ cup diced fresh mango
¼ cup fresh cilantro, chopped
Fresh lime wedges, for serving (optional)
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Heat olive oil in a skillet. Cook onion until soft, then add garlic, ginger, cumin, coriander, chili powder, and salt. Cook 1 minute.
Stir in coconut milk and mango purée. Simmer 2–3 minutes until slightly thickened.
Place chicken thighs in baking dish and pour sauce evenly over chicken.
Cover with foil and bake for 20 minutes.
Uncover and bake another 15–20 minutes until chicken is cooked through.
Top with fresh mango, cilantro, and a squeeze of lime before serving.
