Sweet & Savory Maple Sausage Breakfast Patties are a vegan alternative to classic breakfast sausage.

Ingredients

  • 1 block extra-firm tofu, pressed and drained
  • 1/4 cup chickpea flour
  • 1/4 cup cassava flour
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut aminos or tamari
  • 1 tablespoon avocado oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg
  • Optional: red pepper flakes

Instructions

  1. Remove excess moisture using a tofu press or paper towels.
  2. Finely crumble tofu into a large bowl.
  3. Add remaining ingredients and stir until a soft dough forms.
  4. Form into patties about 2–3 inches wide.
  5. Pan-fry in a lightly oiled skillet over medium heat for 3–5 minutes per side until golden.
  6. Enjoy warm or cool and store for later use.
