- 1 block extra-firm tofu, pressed and drained
- 1/4 cup chickpea flour
- 1/4 cup cassava flour
- 1 tablespoon maple syrup
- 1 tablespoon coconut aminos or tamari
- 1 tablespoon avocado oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon ground sage
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon nutmeg
- Optional: red pepper flakes
- Remove excess moisture using a tofu press or paper towels.
- Finely crumble tofu into a large bowl.
- Add remaining ingredients and stir until a soft dough forms.
- Form into patties about 2–3 inches wide.
- Pan-fry in a lightly oiled skillet over medium heat for 3–5 minutes per side until golden.
