A moist and hearty classic meatloaf recipe that uses oats instead of breadcrumbs for a tender texture and subtle nutty flavor. This comforting dish is perfect for weeknight dinners or family gatherings.

  • 1 ½ pounds lean ground beef (80/20)
  • 1 cup quick-cooking oats
  • 1 cup tomato sauce, divided
  • 1 large egg
  • ½ cup finely chopped onion
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce (optional)
  • 1 cup milk (used in one version of the recipe)
  • 1 cup old fashioned oats (used in one version of the recipe)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground beef, quick oats, ½ cup of the tomato sauce, chopped onion, egg, and all the seasonings. (If using milk and old fashioned oats, combine beef, old fashioned oats pulsed briefly in a food processor, milk, egg, onion, salt, pepper, and ½ cup tomato sauce).
  3. Gently mix the ingredients together using your hands or a sturdy spoon, being careful not to overwork the meat.
  4. Transfer the mixture into the loaf pan, shaping it evenly.
  5. Spread the remaining ½ cup of tomato sauce across the top for a savory-sweet glaze.
  6. Bake the meatloaf for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let it rest for at least 10 minutes before slicing and serving.

Notes

  • Use quick-cooking oats for best results. If using old-fashioned oats, pulse them briefly in a food processor.
  • Do not overmix the meat mixture; gentle mixing ensures a tender loaf.
  • Allow the meatloaf to rest after baking to help it hold its shape when sliced.
  • Consider adding Worcestershire sauce or smoked paprika for extra flavor depth.
  • Ground turkey or chicken can be substituted for ground beef for a lighter version.
  • For a variation, top with barbecue sauce or ketchup mixed with honey.
