2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
4 cups mixed salad greens
1 large avocado, sliced
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/3 cup feta cheese, crumbled
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 small garlic clove, minced
Salt and pepper, to taste
Instructions
Season salmon with salt, pepper, and oregano.
Heat olive oil in a skillet over medium heat and cook salmon 4–5 minutes per side until flaky.
Remove salmon and rest briefly, then flake into large pieces.
Whisk dressing ingredients in a small bowl until smooth.
In a large bowl, combine greens, avocado, tomatoes, cucumber, and red onion.
Top with salmon and feta cheese.
Drizzle with dressing just before serving and gently toss.
