1 cup graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
Crushed peppermint candies
Red and green mini M&Ms
Whipped cream
Holiday sprinkles
Gingerbread cookie crumbles
Fresh cranberries or raspberries
Instructions
Heat your oven to 325°F (163°C). Line a muffin tin with cupcake liners.
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Add about 1 tablespoon to each liner and press down firmly. Bake for 5 minutes, then set aside.
In a large bowl, beat softened cream cheese until smooth. Add sugar and beat again. Mix in eggs one at a time. Stir in vanilla and sour cream until just combined.
Spoon cheesecake batter over the crusts, filling each about 3/4 full.
Bake for 18–20 minutes, or until centers are slightly jiggly. Do not overbake.
Let cool on the counter for 1 hour, then refrigerate for at least 4 hours or overnight.
Add whipped cream, berries, peppermint, sprinkles, M&Ms, or gingerbread toppings as desired.
