Delicious Nantucket Cranberry Pie: A Cozy Holiday Treat

  • 2.5 cups Cranberries (fresh or frozen, coarsely chopped)
  • 0.5 cups Pecans or Walnuts (chopped)
  • 0.5 cups White Sugar (for filling)
  • 1 cups White Sugar (for topping)
  • 2 large Eggs (lightly beaten)
  • 0.75 cups Unsalted Butter (softened)
  • 1 cups All-Purpose Flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Vanilla Extract
  • 0.5 teaspoon Almond Extract

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly butter a 10-inch pie plate.
  2. In a mixing bowl, combine 2 ½ cups of cranberries, ½ cup of chopped nuts, and ½ cup of sugar. Spread the filling evenly in the pie plate.
  3. In a separate bowl, whisk together the eggs, butter, 1 cup of sugar, flour, salt, vanilla extract, and almond extract until well combined.
  4. Dollop the batter over the cranberry filling and spread it evenly with a spatula.
  5. Bake in the preheated oven for 40-45 minutes until golden brown and a toothpick comes out clean.
  6. Let the pie cool at room temperature for at least 30 minutes before serving.
