A festive menu for New Year’s Day celebrations.

Ingredients

  • 12 oz. of cooked black-eyed peas
  • 2 cups of collard greens
  • 1 lb. of pork shoulder
  • 1 cup of diced tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp. of paprika
  • Salt and pepper to taste
  • 1 loaf of cornbread

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add pork shoulder and brown on all sides.
  3. Add black-eyed peas, collard greens, diced tomatoes, and spices.
  4. Cover and simmer for 1 hour.
  5. Serve with cornbread on the side.
