- 2 cups of collard greens
- 1 lb. of pork shoulder
- 1 cup of diced tomatoes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp. of paprika
- Salt and pepper to taste
- 1 loaf of cornbread
- In a large pot, sauté onion and garlic until translucent.
- Add pork shoulder and brown on all sides.
- Add black-eyed peas, collard greens, diced tomatoes, and spices.
- Cover and simmer for 1 hour.
- Serve with cornbread on the side.
