Oatmeal Chocolate Chip Bars are a delicious and chewy dessert that combines hearty oats with rich, sweet chocolate chips. These easy-to-make bars are perfect for a cozy treat, snack, or breakfast.

Ingredients

Scale
  • 1 ½ cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ¾ cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup chopped walnuts or additional chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease it lightly.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisk until combined.
  3. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and optional nutmeg. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Stir in the chocolate chips and fold in any optional mix-ins like walnuts.
  5. Spread the batter evenly into the prepared baking pan. Smooth the top with a spatula.
  6. Bake for 20–25 minutes, or until golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Remove from the oven and let the bars cool in the pan for about 10 minutes. Transfer to a cooling rack to cool completely before slicing into squares.

Notes

  • Store in an airtight container for up to one week.
