Ingredients
Scale
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 3/4 cups granulated sugar
1 cup packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 cup rolled oats (old-fashioned or quick-cooking)
1 cup chopped walnuts or pecans (optional)
1/2 cup raisins or dried cranberries (optional)
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt. Whisk thoroughly.
In a large bowl, cream together softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy (3-5 minutes).
Beat in eggs one at a time, then stir in vanilla extract.
Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in rolled oats, nuts (if using), and raisins or cranberries (if using).
Drop rounded tablespoons of cookie dough onto prepared baking sheets, leaving about 2 inches between cookies.
Bake for 10-12 minutes, or until edges are golden brown and centers are slightly soft.
Remove from oven and let cool on sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
Use softened butter for best results.
Do not overmix the dough; mix until just combined.
Ovens vary; adjust baking time as needed.
Allow cookies to cool completely to prevent crumbling.
Store cooled cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
Cookie dough can be made ahead and refrigerated for up to 3 days before baking.
Feel free to adjust sweetness, add different nuts, dried fruits, chocolate chips, or spices.
