  • For the Chicken:
  • 4 boneless, skinless chicken thighs or breasts
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • 12 tbsp olive oil
  • For the Buttered Noodles:
  • 8 oz egg noodles (or wide pasta)
  • 2 cups chicken broth (low sodium preferred)
  • 23 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Season Chicken: Pat chicken dry. Season both sides with garlic powder, smoked paprika, Italian seasoning, salt, and pepper.
  2. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Cook Garlic: In the same pan, add minced garlic. Cook for 30 seconds until fragrant.
  4. Add Broth & Noodles: Pour in chicken broth and bring to a simmer. Add egg noodles and stir to coat. Cover and cook for 7–8 minutes, stirring occasionally, until noodles are tender.
  5. Finish with Butter: Stir in butter until melted and noodles are coated. Return chicken to the skillet. Let everything heat together for 2–3 minutes.
  6. Serve: Garnish with parsley and Parmesan if desired. Serve hot and enjoy!

Notes

  • For added richness, stir in a splash of cream or a tablespoon of cream cheese.
  • Add vegetables like spinach or peas in the last few minutes for a full meal.
