For the Chicken:
4 boneless, skinless chicken thighs or breasts
1 tsp garlic powder
1 tsp smoked paprika
1 tsp Italian seasoning
Salt & black pepper to taste
1 – 2 tbsp olive oil
For the Buttered Noodles:
8 oz egg noodles (or wide pasta)
2 cups chicken broth (low sodium preferred)
2 – 3 tbsp unsalted butter
2 cloves garlic, minced
2 tbsp chopped fresh parsley (optional)
Grated Parmesan cheese (optional)
Instructions
Season Chicken: Pat chicken dry. Season both sides with garlic powder, smoked paprika, Italian seasoning, salt, and pepper.
Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
Cook Garlic: In the same pan, add minced garlic. Cook for 30 seconds until fragrant.
Add Broth & Noodles: Pour in chicken broth and bring to a simmer. Add egg noodles and stir to coat. Cover and cook for 7–8 minutes, stirring occasionally, until noodles are tender.
Finish with Butter: Stir in butter until melted and noodles are coated. Return chicken to the skillet. Let everything heat together for 2–3 minutes.
Serve: Garnish with parsley and Parmesan if desired. Serve hot and enjoy!
Notes
For added richness, stir in a splash of cream or a tablespoon of cream cheese.
