One Pot Cajun Chicken Alfredo Orzo is a delightful fusion of creamy Alfredo sauce, tender chicken, and bold Cajun spices, all cooked together in just one pot.

  • 2 Boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 cup Orzo pasta
  • 1 cup Heavy cream
  • 1/2 cup Freshly grated Parmesan cheese
  • 3 cups Low-sodium chicken broth
  • 1 cup Bell peppers, chopped
  • 2 cups Spinach
  • 2 tablespoons Olive oil

Instructions

  1. Season the chicken breasts with Cajun seasoning and let sit for 10 minutes.
  2. Heat olive oil in a large pot over medium-high heat. Cook chicken for 5-7 minutes per side until golden brown. Remove and set aside.
  3. Add more olive oil if needed, then sauté chopped bell peppers for 3 minutes. Add minced garlic and spinach, cooking for another 2 minutes.
  4. Add orzo pasta and stir for 1 minute.
  5. Pour in chicken broth and heavy cream. Stir well and bring to a simmer.
  6. Reduce heat to medium-low and cover. Simmer for 10-12 minutes, stirring occasionally.
  7. Slice rested chicken into strips. Stir Parmesan cheese into orzo until melted, then fold in sliced chicken.
  8. Adjust seasoning with more Cajun seasoning or salt if needed. Serve hot.

  • Adjust the level of Cajun seasoning to your taste.
  • Garnish with extra Parmesan or fresh herbs for added flavor.
