Crispy oven-fried feta rolls with a sweet and spicy chili honey drizzle. This appetizer features flaky phyllo pastry filled with a creamy feta and ricotta mixture, enhanced with fresh dill and parsley. It’s a quick, easy, and impressive Mediterranean-inspired treat perfect for any occasion.

  • 200 g Feta Cheese
  • 100 g Ricotta Cheese
  • 2 tablespoons Fresh Dill
  • 2 tablespoons Fresh Parsley
  • 1 tablespoon Lemon Zest
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • For the Wrapper:
  • 10 sheets Phyllo Pastry
  • 1/4 cup Olive Oil
  • For the Drizzle:
  • 1/2 cup Honey
  • 1 teaspoon Red Chili Flakes
  • 2 tablespoons Sesame Seeds

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta, ricotta, fresh dill, parsley, and lemon zest. Season with salt and pepper, mixing well.
  3. Lay out phyllo sheets on a clean surface covered with a damp towel. Brush one sheet with olive oil, layer another on top, and brush this sheet as well.
  4. Spoon a generous amount of the cheese filling along one edge of the phyllo sheet, fold sides in, and roll tightly to create a log shape.
  5. Place rolls seam-side down on the baking sheet, brush with olive oil, and sprinkle sesame seeds on top.
  6. Bake for 25-30 minutes until golden brown.
  7. Heat honey in a small saucepan and stir in red chili flakes. Simmer until warm and slightly thickened.
  8. Remove rolls from the oven and drizzle with warm chili honey before serving.

Notes

  • Cover phyllo pastry with a damp towel to prevent it from drying.
  • Adjust red chili flakes according to taste and use various herbs or cheeses for customization.
